Under Schedule 4 of the FSS (Licensing and Registration of Food Businesses) Regulations, 2011, a food business operator carries three standing obligations for every person who handles food on their premises.
Every food handler must be examined by a registered medical practitioner at the time of joining and at least once a year after that.
Food handlers must be vaccinated against the enteric group of diseases. The obligation sits with the business, not the worker.
The examination and vaccination records must be maintained and produced when a food safety officer asks for them.
Most operators discover the gap during a licence renewal or an audit, when the officer asks for records that were never collected in one place. Running it as a scheduled annual camp turns a recurring scramble into a fixed date in the calendar.
